Exciting New Addition to Our Culinary Team

We are proud to welcome Executive Chef Rafael Llanes to the Akwesasne Mohawk Casino Resort culinary team. Chef Rafael brings over 15 years of diverse culinary experience spanning high-volume casino resorts, upscale steakhouses, and independent restaurant operations. A graduate of Le Cordon Bleu in Miami, Chef Rafael combines classical training with a modern, guest-focused approach to cuisine.

Chef Rafael most recently served as Executive Chef at Shamus T Bones, a high-volume steakhouse in California. Prior to that, he served as the Sous Chef and Acting Executive Chef at Bear River Casino Resort, where he oversaw multiple outlets and managed a kitchen team of 30. His leadership there extended through a critical period when he assumed full executive responsibilities during a colleague’s medical leave.

His background also includes key roles at Fleming’s Prime Steakhouse & Wine Bar in Miami, where he served as Executive Sous Chef, and at Finnegan’s Pub & Grill, where he spent five years as Head Chef, overseeing all back-of-house operations. He also operated his own catering business, further refining his expertise in menu development, cost control, and high-level food presentation.

Chef Rafael’s culinary philosophy is rooted in bold flavors, quality ingredients, and creating memorable dining experiences. His specialties include recipe development, banquet execution, vendor relations, and food and beverage pairing. His passion for hospitality and mentorship has earned him recognition for building strong kitchen teams that consistently deliver excellence, creativity, and consistency.

As he relocates to Akwesasne to pursue his culinary vision, we are excited for Chef Rafael to bring his experience, leadership, and energy to our culinary operations. We look forward to the innovation and dedication he will bring to every plate!
